Which material actually survives a Filipino kitchen?

This is the decision that determines whether your rack lasts one year or five, and everything else is secondary to it.

A dish rack is the only thing in your kitchen that lives permanently wet. In a humid climate that is a slow test of one thing: is there bare metal anywhere water can reach it?

• Plastic (PP) cannot rust at all. There is no coating to chip and no metal underneath. It flexes under heavy stoneware and it will crack rather than bend if you overload it, but it outlives every coated rack around it.
• Bare stainless steel has no finish to fail, so its rust resistance does not depend on keeping anything intact. Cheaper racks use thin wire that flexes under a heavy load.
• Aluminum does not rust either, forming a thin dull oxide layer instead of flaking. It is softer than stainless, so heavy pans dent it.
• Powder-coated and chrome-plated steel look the sharpest and are the most rigid, but the coating is the only protection. It chips at welds, corners, and anywhere a pan knocks it, and rust spreads outward from that point.
• Wood cannot rust, but it absorbs water, so it needs to dry fully between washes or it darkens and grows mildew.

If your rack lives beside a wet sink and you have already thrown one away, buy plastic, stainless, or aluminum. Coated steel is for kitchens where the rack gets wiped dry.

One tier or two?

Count your usual load, then measure the clearance above your counter.

One tier fits the narrow strip between a sink and the wall, stays low enough to sit under a wall cabinet, and handles the dishes of one or two people. It is the right answer far more often than the product photos suggest.

Two tiers dry a family’s dishes in a single pass by growing upward rather than along the counter. The catch is height: a two-tier rack, and especially a three-tier one, will foul a low wall cabinet or a window sill. Measure that gap before you buy, not after.

Look for upright plate slots on whichever tier holds plates. Plates stood on edge shed water and dry in a fraction of the time they take lying flat in a basket, and it is the single biggest difference between a rack that dries dishes and a tray that holds them.

How should the water get out?

Three approaches, and the right one depends on your counter height.

• A drain spout routes water out on its own, which is the least work of the three. It only works if the rack sits at or above the sink lip, so on a low counter or with a deep-set sink the spout does nothing and you are back to lifting the tray.
• An over-sink rack skips the question entirely by hanging across the sink bowl and dripping straight down the drain. No tray, no counter space used. In exchange the sink is occupied, so you lift it off to wash a stockpot.

What about boards, knives, and mugs?

Most racks handle plates and cups and abandon everything else, which is why a chopping board ends up lying flat and damp on the counter. Standing a board on edge dries both faces, which is what stops the underside going mouldy.
