How many knives does a Filipino kitchen actually need?
Four, and a cleaver. A chef knife does most of the prep, a paring knife handles peeling and small work, a bread knife saves the crust, and a slicer deals with cooked meat. Then a chopper for bone-in chicken and pork, which Western-styled sets leave out and Filipino cooking needs constantly. Anything beyond that is a set padding its piece count.
Is an expensive knife set worth it?
Only past a point most people never reach. A sharp cheap knife cuts better than a dull expensive one, so the sharpener matters more than the price tag. What real money buys is better balance, a full tang, handles that stay comfortable through an hour of prep, and steel that holds an edge longer. Wooden block, steel stand, or magnetic strip?
A wooden block is kindest to the edges but keeps slots damp if knives go back wet, which matters in Philippine humidity.
