The whitening is optical

A white coat does not go grey, it goes yellow. Whitening shampoos counteract that with a blue or violet tint which sits opposite yellow on the color wheel, so the eye reads the coat as brighter and cooler.

It is the same principle as purple shampoo for blonde hair, and it is a genuine effect. It is also a coating effect rather than a cleaning one: nothing is being removed, the color is being visually cancelled.

So a whitening shampoo brightens the coat generally and leaves the specific marks people bought it for. Worth knowing before spending.
